Ideal as a dessert cheese, gives a strong taste in warm cuisine.

A whiff of red wine in the air
It is not only an experience to discover this cheese; every bite makes us relive how it feels to try something new for the first time.
The first holiday in the mountains, the first visit to Switzerland, the first time sleeping under the stars. Red Wine Farmer Cheese brings us back to the moment to savour it to the full once more … because some things we can experience for the first time more than once.
I wanted to create a new cheese. A cheese in the Tilsit tradition with a special touch. I knew I had to look for it in eastern Switzerland, so I drove right across the Säntis massif, but as so often happens with wishes, nothing met my expectations.
Shortly before I wanted to return home, I found a cheese dairy in Toggenburg. I spoke to the cheesemaker and we created an almost perfect cheese.
Why only almost perfect? Something special was missing in the affinage. I looked for a cellar that wasn’t too cold and damp to let the cheese mature in peace. This should give the cheese a wonderful creamy taste. When I went into this cellar, there was a smell of red wine in the air; I was told that red wine was used here for the affinage.
After 6 months, the cheese was perfect. It has a nice dark rind and a light red wine flavour, a lot of character and is creamy at the same time. This was the birth of the Red Wine Farmer Cheese. A cheese where every bite is an experience.
