Red wine Farmer cheese
Semi-hard cheese 6 months refined with red wine, powerfully spicy with a hint of red wine. Produced in Eastern Switzerland, matured in Bern.
Ideal as a dessert cheese, gives a strong flavour in warm cuisine.
I wanted to create a new cheese, a cheese in the Tilsiter tradition, it should be a cheese with a special note. I knew I had to look for it in eastern Switzerland and so I drove all over the Säntis massif, but nothing met my expectations.
Just before I wanted to give up, I found a cheese dairy in Toggenburg. I spoke to the cheese maker and we created a cheese that was almost perfect. But there was still some affinage missing. I was looking for a cellar not too cold and humid to let the cheese ripen in peace. The humid cellar should give the cheese a nice creamy taste. When I went into this cellar, there was a smell of red wine in the air, and they told me they are using red wine for the affinage.
After 6 months the cheese was perfect, it had a nice dark rind and a light red wine taste, a lot of character and was creamy at the same time. This was the birth of the Redwine Farmer cheese.
