This cheese contains the magic of discovery, because every bite is like a journey into the unknown. It is for those moments when you discover the magic.

For the evening when your counterpart enchants you with a laugh for the first time.

Or for breakfast while you watch the sunrise, waiting for a day full of adventure.

I decided it was time to create this special mountain cheese. A cheese with a taste and character like no other.

Strong, creamy, with that special touch of the new.

This type of cheese is mainly made in the French-speaking part of Switzerland and that’s where I started looking. But I couldn’t find anything and after a few months of research I put the project on hold.

I had almost forgotten my plan when I remembered that when I was a child we used to buy mountain cheese in the Emme valley – the region where the original raw milk Emmentaler is made.

I decided to set off again and searched way up in the mountains, where I could hardly get anywhere by car. There I found a cheese dairy that made a fantastic raw milk Emmentaler. I spoke to the cheesemaker and asked him if he could make a mountain cheese; he said, “Yes, but I’ve never made that kind of cheese before.”

But together we set out to find something new and after a bit of trial and error we had a perfect cheese.
