Hard cheese, matured for 12 months. The name comes from the saint of the city of St Gallen. Strong and spicy, a mixture of semi-hard and hard cheese.

A saint for your cheese counter

The secret ingredient for this cheese is passion. Because Gallus makes unforgettable moments when time stands still. Like the time you forgot the name of that dish in the restaurant because you could only see the eyes of your companion. Or those moments when you are completely devoted to your hobby and almost only need something on the side to recapture your soul.

In 2010, I was looking for a cheese dairy that made raw milk cheese. It had to be a cheese with an exceptional taste, made from the best milk by a cheesemaker who loves his craft.

Thanks to our 150-year family tradition and my experience, I know many cheese dairies; often we had been working together for generations. But I knew it would be a long and time-consuming search. My father and I started looking all over Switzerland. We were both about to give up when chance led me to a cheese dairy in eastern Switzerland.

The cheesemaker had just taken over the dairy from his father and was in the process of developing new cheeses. We sat down and he presented me with his ideas and showed me two types of cheese, one of which was to be a hard cheese named after the saint of the city of St Gallen.

It took a few tries until the cheese was perfect, but in 2012 the time had come. Gallus was born – a hard cheese, spicy, strong with the typical character of the cheese of eastern Switzerland.

Only our passion for this project brought us Gallus: a cheese that underlines special moments and does justice to the energy of those moments.
